Louisiana Culinary Institute

The Louisiana Culinary Institute is licensed by the State of Louisiana Board of Regents, is accredited by the Council on Occupational Education (COE), is a member of the Louisiana Restaurant Association (LRA), and is a member of the National Restaurant Association (NRA). Graduates are awarded an Associate of Occupational Studies Degree in Culinary Arts with concentrations in Advanced Culinary Arts or Advanced Baking and Pastry. Depending upon concentration choice, students are eligible for certification with the National Restaurant Association Educational Foundation's ManageFirst Program in ServSafe® Food Safety and Sanitation, Customer Service, Controlling Foodservice Costs, Inventory and Purchasing and Hospitality and Restaurant Management. Financing and Student Aid are available to students who qualify. LCI takes great pride in the quality of the student over the quantity. With three starts per year and only 16 spots for Advanced Baking and Pastry and approx 30 spots for Advanced Culinary Arts, LCI has a healthy waiting list of applicants. Graduates are awarded an Associate of Occupational Studies Degree in Culinary Arts with concentrations in Advanced Culinary Arts or Advanced Baking and Pastry and are eligible for certification with the National Restaurant Association Educational Foundation's ManageFirst Program in ServSafe® Food Safety and Sanitation, Customer Service, and Controlling Foodservice Costs. Culinary Arts 112 – Catering and Volume Food Service
30 Lecture Clock Hours / 2 Semester Credit Hours
This is an introductory course on catering for food service and hospitality managers which utilizes sound guidelines and a practical approach to operating and managing a catering business. The course includes the guidelines on how to do on and off premise catering, hire and manage catering personnel, writing a contract, sanitation, set up a kitchen, set up and use service equipment, conduct special events and kosher catering along with wine and bar service, menu making and food presentation.

Culinary Arts 251-Frozen Desserts-Pastry Lab I
30 Lab Clock Hours/ 1 Semester Credit Hour
Production of all forms of frozen desserts will be discussed and produced from the classics to modern times. This includes ice creams, sorbets, granites, terrines, bombes, Alaska and soufflé glace.

Culinary Arts 330 – International Cuisine
60 Lab Clock Hours / 2 Semester Credit Hours
This is a comprehensive course on International Cookery. This course provides the student with an explanation of the development of cuisines, as well as a historical background and recipes from the cookery of Europe, Africa, the Middle East, Asia, Australia, and Latin America.
